A long time ago, Italian cooks were
known for their baking skills. Many of them were hired in English and French
households. During that time, they developed a soft cake by replacing yeast
with beaten eggs. Later it became Queen Victoria’s favorite. She delighted herself
having the afternoon tea served with the soft cake. And she even developed her
own style, having the cake to be sandwiched with jam and whipped cream. This is
still popular in England with many other variations of sponge cake.
